Roasted Delicata Squash Rings Recipe

Ingredients
  

  • 4 Delicata Squash
  • 1 tsp Salt
  • olive or avocado spray

Equipment

  • 1 Knife or mandoline slicer
  • 1 Cutting board
  • 1 Piece of parchment paper optional
  • 1 Wire rack optional
  • 1 Sheet pan
  • 1 Bowl
  • 1 Butter knife

Method
 

  1. Preheat oven to 450 degrees
  2. Place parchment paper on sheet pan
  3. Place wire rack on top of parchment paper
  4. Wash & dry delicata squash
  5. Slice delicata squash into 1/4-inch rings using a mandoline or a knife.
  6. Use butter knife to remove seeds and squash guts.
  7. Add delicata squash rings to bowl
  8. Spray generously with avocado oil or olive oil spray
  9. Season with salt
  10. Lay delicata squash out on wire rack
  11. Roast for 20 minutes
  12. Turn delicata squash over and roast for remaining 15 minutes
  13. Allow delicata squash to cool
  14. Enjoy!
