Equipment

  • 1 Knife or mandoline slicer
  • 1 Cutting board
  • 1 Piece of parchment paper optional
  • 1 Wire rack optional
  • 1 Sheet pan
  • 1 Bowl
  • 1 Butter knife

Ingredients
  

  • 4 Delicata Squash
  • 1 tsp Salt
  • olive or avocado spray

Instructions
 

  • Preheat oven to 450 degrees
  • Place parchment paper on sheet pan
  • Place wire rack on top of parchment paper
  • Wash & dry delicata squash
  • Slice delicata squash into 1/4-inch rings using a mandoline or a knife.
  • Use butter knife to remove seeds and squash guts.
  • Add delicata squash rings to bowl
  • Spray generously with avocado oil or olive oil spray
  • Season with salt
  • Lay delicata squash out on wire rack
  • Roast for 20 minutes
  • Turn delicata squash over and roast for remaining 15 minutes
  • Allow delicata squash to cool
  • Enjoy!
