Ingredients

Delicata Squash

Salt
olive or avocado spray
Instructions
Preheat oven to 450 degrees
Place parchment paper on sheet pan
Place wire rack on top of parchment paper
Wash & dry delicata squash
Slice delicata squash into 1/4-inch rings using a mandoline or a knife.
Use butter knife to remove seeds and squash guts.
Add delicata squash rings to bowl
Spray generously with avocado oil or olive oil spray
Season with salt
Lay delicata squash out on wire rack
Roast for 20 minutes
Turn delicata squash over and roast for remaining 15 minutes
Allow delicata squash to cool
Enjoy!
