Roasted Delicata Squash Rings Recipe
Equipment
- 1 Knife or mandoline slicer
- 1 Cutting board
- 1 Piece of parchment paper optional
- 1 Wire rack optional
- 1 Sheet pan
- 1 Bowl
- 1 Butter knife
Ingredients
- 4 Delicata Squash
- 1 tsp Salt
- olive or avocado spray
Instructions
- Preheat oven to 450 degrees
- Place parchment paper on sheet pan
- Place wire rack on top of parchment paper
- Wash & dry delicata squash
- Slice delicata squash into 1/4-inch rings using a mandoline or a knife.
- Use butter knife to remove seeds and squash guts.
- Add delicata squash rings to bowl
- Spray generously with avocado oil or olive oil spray
- Season with salt
- Lay delicata squash out on wire rack
- Roast for 20 minutes
- Turn delicata squash over and roast for remaining 15 minutes
- Allow delicata squash to cool
- Enjoy!
